Shrimp Or Tuna Croquettes Recipe

Chop meat finely (about 2 c.
).
Heat 3 tbsp.
Crisco.
Blend in flour.
Add in lowfat milk, cook and stir overy very medium heat till ver thick and smooth; remove from heat.
Add in onion, parsley, lemon juice and seasonings; stir in shrimp, tuna or possibly chicken.
Preheat Crisco for deep frying to 350 degrees shape meat mix into 8 cones, about 1/4 c.
for each.
Roll in crumbs, combine egg with water.
Dip cones in egg mix; roll in crumbs again.
Deep fry a few croquettes at a time in Crisco till brown and warm about 3 min.
Turn if necessary for even cooking.
Drain on paper towel.
Keep warm.
Prepare peas according to package directions.
Spoon creamed peas over croquettes.
Makes 4 servings.
