Delicious Potato Rolls Recipe



Soften active dry yeast in hot water.
Combine potatoes, shortening, sugar, salt and warm lowfat milk.
Cold to lukewarm, add in softened yeast and Large eggs.
Stir in 3 c.
Beat well, stir in remaining flour (or possibly sufficient to make soft dough).
Knead on lightly floured surface till smooth and elastic (6 to 8 min).
Place in lightly greased bowl, turning once to grease surface, cover and let double (about 1 hour) in hot place.
Punch down, shape into 1 big ball.
Cover and let rest 10 min.
Shape into rolls, place on greased cookie sheet and let rise till almost double (about 1 hour).
Bake in warm 400 degree oven for 10 to 12 min or possibly till golden.
Butter top of buns while warm from oven.
Can freeze - hot up in foil.
