Apple Topped Oatcakes Recipe



In a large bowl, combine lowfat milk and oats; let stand for 5 min.
Stir in egg, oil and molasses.
Combine dry ingredients; stir in oat mix just till moistened.
Beat egg whites till soft peaks form; fold gently into batter.
Set aside.
Heat butter in a skillet unitl foamy.
Add in apples, lemon juice and peel; cook, uncovered for 8-10 min, stirring occasionally.
Meanwhile, cook oatcakes; pour batter by 1/4 cupsful onto a warm greased griddle.
Cook till bubbles form; turn and cook till browned on other side.
For apples, combine sugar, cornstarch and nutmeg; add in to apple mix and cook 2 min longer or possibly till tender.
Serve hot over oatcakes.
Yield: 6-8 servings.
