Farmer's Market Corn Toss
- 1 tablespoon extra virgin olive oil
- 1 sweet onion, chopped,
- 1 red pepper, chopped,
- 2 ears corn on the cob, kernels cut off
- 1 large zucchini, sliced,
- 14 cup parsley, fresh, chopped
- 14 teaspoon black pepper
- 4 tablespoons parmesan cheese, grated, divided
Saute onions and peppers in oil.
add everything but cheese and cook about 15 minutes.
toss with cheese at end.
