Two Cheese Chicken Rolls Recipe
Ingredients
- 4 lg. boned, skinned chicken breasts
- 2 ounce Swiss cheese cut into 2-inch strips
- 2 tbsp crumbled blue cheese
- 2 beaten Large eggs
- 1 c. fine bread crumbs
- 1 tbsp melted butter
Directions
Place chicken pcs between two pcs of plastic wrap.With mallet from center outward form cutlets 1/4 inch thick.
Peel off wrap.
Sprinkle chicken with salt.
Place strip of Swiss cheese and blue cheese at end of cutlet.
Roll up jelly roll fashion tucking in sides.
Press end to seal.
Coat with flour, dip in Large eggs, roll in bread crumbs.
Refrigeratefor 1 hour.
Sprinkle melted butter over chicken before baking in 325 degree oven for 40-45 min.
