Mango Coffee Cake Recipe
DirectionsIn a large mixing bowl, combine first 5 ingredients.
Gently mix in mango.
In a small bowl, whisk together the egg, lowfat milk, and melted butter.
Add in to the flour mix and stir.
Spread into as greased 8 x 8 inch baking pan.
Combine topping ingredients and sprinkle over batter: 3/4 c.
brown sugar 1 tbsp.
flour 1/4 c.
minced walnuts (we get these and pecans in care pkgs.
!!) Bake at 425 degrees for 20-25 min, till top is light golden.
We get bushels of fresh mango off of the tree in our yard.
This would also work great with fresh blueberries or possibly peaches you get.
