Ice Cream Sandwiches (Gluten Free & Vegan!)
Ingredients
- 2- 1/2 cups Blanched Almond Flour
- 1/2 teaspoons Celtic Sea Salt
- 1/2 teaspoons Baking Soda
- 1/2 cups Grapeseed Oil
- 1 Tablespoon Vanilla Extract
- 1/2 cups Agave Nectar
- 1 cup Dark Chocolate Chips 73% Cacao
- 1 cup Raw Cashews
- 2 cups Water
- 1/4 cups Agave Nectar
- 1 Tablespoon Vanilla Extract
- 1 pinch Celtic Sea Salt

Directions
Chocolate chip cookies: Combine dry ingredients in a large bowl.Stir together wet ingredients in a smaller bowl.
Mix wet ingredients into dry.
Form 1/2 inch balls and press onto a parchment-lined baking sheet.
Bake at 350 degrees for 7-10 minutes.
Cool and serve.
Vegan vanilla ice cream: In a Vita-Mix (or other high speed blender), combine all ingredients and blend on high speed.
Pour mixture into an ice cream maker and process according to instructions.
Serve.
To make sandwiches, simply sandwich ice cream in between two cookies.
