Sesame Scallion Muffins
Ingredients
- 1 12 cups flour
- 12 cup whole wheat flour
- 2 14 teaspoons baking powder
- 1 teaspoon baking soda
- 12 teaspoon salt
- 1 tablespoon sugar
- 34 cup soymilk
- 34 cup plain soy yogurt
- 14 teaspoon vegetable oil
- 2 tablespoons toasted sesame oil
- 1 cup green onion, chopped
- 2 tablespoons sesame seeds
Directions
In a large bowl, combine dry ingredients.In medium bowl, whisk together sugar, milk, yogurt, vegetable oil and sesame oil until well blended.
Add the milk mixture to the flour mixture.
Fold in green onions.
Divide batter into muffin cups.
Sprinkle with sesame seeds.
Bake at 400 for 18-22 minutes.
