Dijon Cilantro Tuna Sandwiches
Ingredients
- 12 cup plain nonfat yogurt
- 6 tablespoons sweet pickle relish
- 2 tablespoons Dijon mustard
- 2 tablespoons whole grain mustard
- 2 cans (6 ounce) tuna in water, drained (I only use white tuna)
- 1 cup celery, chopped,
- 12 cup red onion, chopped,
- 12 cup cilantro, chopped,
- 12 slices whole grain bread, toasted
- 12 slices tomatoes
- lettuce leaf
Directions
In a bowl mix first 4 ingredients (yogurt - mustards); stir in tuna.Stir in veggies (celery - cilantr).
Cover and chill for 30 minutes.
Spoon 1/2 cup tuna on 6 toasted bread slices, top with tomatoe slices and lettuce and the rest of the bread slices.
Cut sandwiches in half, if desired.
