Santa Fe Enchilada Bake
Ingredients
- 1 lb chicken breast, boneless
- 1 large onion, chopped
- 1 large green pepper, chopped
- 2 cup salsa
- 1 packages 10 oz. frozen corn, thawed and drained
- 12 corn tortillas
- 1 cup sour cream
- 1 1/2 cup mexican style shredded four cheeses
Directions
Heat oven to 400 cook chicken pieces, onion and peppers in large skillet until chichen is cooked stir in corn and salsa arrange tortillas on bottom of 13x9 inch baking pan; cover with chicken mixture, sour cream and cheese.Repeat layers; cover with foil.
Bake 30 minutes.
remove foil bake additional 10 minutes.
