Chipotle Potato Salad
Ingredients
- 2 pounds new potatoes small
- 1 tablespoon olive oil
- 1 x salt and black pepper to taste
- 1 cup yogurt, plain low-fat
- 1/2 cup cilantro, chopped
- 3 each scallions, sliced, spring or green onions
- 1 each sweet yellow bell peppers, chopped
- 1 each chipotle chili peppers, chopped
- 1 tablespoon dijon mustard
- 1 teaspoon lime juice

Directions
Preheat oven to 450 F degree.Toss potatoes with oil, salt and pepper.
Roast for 15 to 20 minutes or until tender and golden.
Remove from oven and allow to cool slightly.
Mix yogurt, cilantro, onions, yellow and chipolte peppers, mustard and lime juice.
Add potatoes and mix until combined.
Season to taste with salt and pepper.
Serve warm, chilled or at room temperature.
