Curried Sweet Potato-Apple Pilaf
Ingredients
- 1 12 teaspoons olive oil
- 14 cup green onion, chopped
- 1 garlic clove, minced,
- 12 cup uncooked long-grain rice
- 1 cup water
- 23 cup sweet potato, peeled, diced
- 1 cup cubed peeled granny smith apple
- 14 cup green pea, frozen
- 2 tablespoons currants
- 34 teaspoon curry powder
- 12 teaspoon cumin, ground
- 14 teaspoon salt
Directions
Heat oil in a medium saucepan over medium-high heat.Add onions and garlic; saute 1 minute.
Stir in rice; saute 1 minute.
Add water and sweet potato; bring to a boil.
Cover, reduce heat, and simmer 15 minutes or until liquid is almost absorbed.
Stir in apple and remaining ingredients; cover and simmer 3 minutes or until thoroughly heated.
