Romaine Mandarin Salad
Ingredients
- 1 bunch romaine lettuce, ripped into bite size pieces
- 1 cup celery, chopped,
- 2 green onions with tops, chopped,
- 1 can (11 ounce) mandarin oranges, drained
- 14 cup almonds
- 2 tablespoons sugar
- 14 cup salad oil
- 2 tablespoons apple cider vinegar
- 2 tablespoons sugar
- 12-1 teaspoon salt
- 3 dashes Tabasco sauce
- black pepper, ground, fresh, to taste

Directions
To Caramelize Almonds: Put almonds in a small skillet or saucepan.Sprinkle with sugar.
Heat, stirring constantly, until light brown.
Put almonds on waxed paper to cool.
For Dressing: Whisk all ingredients together until well mixed.
For Salad: Mix all salad ingredients, caramelized almonds and dressing.
