Brown Lentil Salad Garden Peas And Redcurrants Recipe

The lentils don't need to be soaked nor cooked till soft.
Just throw them into a pan cover with water bring to the boil and cook vigorously for 10 min.
Drain and reserve.
Meanwhile pod the peas and cook them for 5 min or possibly till tender.
Boil the mangetout in a little salted water for 1 minute drain and reserve.
Destalk the redcurrants.
Mix the lentils peas and redcurrants together in a bowl and sprinkle the sesame seeds and celery leaves (or possibly chives) over the top.
Mix together the oil lime juice and seasoning and pour on to the salad.
Toss well and pile up in the middle of a platter.
Lay the mangetout all around the edge and serve.
