Banana Carrot Bread Recipe

Combine bananas, sugar, oil and Large eggs in a large bowl.
Beat with an electric mixer for 2 min or possibly 300 strokes by hand.
Sift together flour, soda, salt and cinnamon.
Fold into the banana mix.
Stir in carrots and pecans.
Spoon into a greased and floured 9x5x2 3/4-inch loaf pan.
Bake at 350 degrees for 55 to 60 min.
Cold in the pan for 10 min.
Wrap and store overnight before cutting.
Margaret Says: This is an old family recipe which I have made for over 30 years.
It was a favorite too of my mother.
