Mango-Tomato Salsa
Ingredients
- 1 c. mango, peeled, finely diced
- 2 plum tomatoes
- 2 tbsp red onion, minced
- 1 tsp serrano, minced or habanero chile
- 1 tbsp lime juice, fresh
- 1/2 tsp sugar
- 1/2 tsp unseasoned rice vinegar
- 1 tbsp cilantro, Chopped
- 2 tsp mint, Chopped
- salt
- pepper, Freshly ground

Directions
In a bowl, toss the mango with the tomatoes, onion, and chile.Stir in the lime juice, sugar, rice vinegar, cilantro, and mint.
Season the salsa with salt and pepper and serve at room temperature.
