Chocolate Sauerkraut Pie
Ingredients
- 2 nine inch pie crusts, (homemade or frozen)
- 1/2 cup Sauerkraut
- 1 stick, (1/2 cup) butter, softened
- 2 cup sugar
- 5 large eggs, well beaten
- 1 cup milk
- 1 tsp vanilla extract
- 2 tbsp lemon juice, fresh
- 2 tbsp grits
- 2 tbsp all-purpose flour
- 1 cup semi-sweet chocolate chips

Directions
Preheat Oven to 350F.Drain and rinse the Sauerkraut thoroughly, squeezing dry.
Cream the softened butter and sugar together with an electric beater in a large mixing bowl for close to a minute and longer.
Add the beaten eggs, milk, lemon juice, and vanilla extract and mix well.
Combine separately, the grits and flour, mixing them well.
Add this to the egg mixture and blend well.
Fold the sauerkraut and chocolate chips into the final mixture and pour into your two pie crusts.
Bake at 350F for 55 to 60 minutes, or until a knife inserted in center comes out clean.
