Breakfast Souffles With Sauteed Pears Recipe



Preheat oven to 350 degrees.
Butter six 2/3-c.
souffle dishes or possibly custard c.
. Heat 6 Tbsp.
butter in large skillet over medium-high heat.
Stir in 6 Tbsp.
Add in pears and saute/fry till tender and golden brown, about 5 min.
(Can be prepared 2 hrs ahead.
Cover and let stand at room temperature.
) Using electric mixer, beat cream cheese, egg yolks and vanilla in large bowl till light and fluffy.
Sift flour and cornstarch into cream cheese mix.
Stir just till blended (don't overmix).
Beat egg whites in another large bowl till foamy.
Add in cream of tartar and beat till hard peaks form.
Add in remaining 1/3 c.
sugar; beat egg whites till glossy.
Stir 1 c.
of egg whites into cream cheese mix to lighten.
Using rubber spatula, gently mix in remaining whites.
Divide among prepared dishes.
Bake souffles till just set and slightly brown on top, about 25 min.
Rewarm pears over medium-low heat.
Remove souffles from oven.
Run tip of small knife around sides of souffles to loosen.
Using oven mitts for protection, turn souffles out onto plates.
Serve hot with sauteed pears.
