Seafood Au Gratin Recipe
Ingredients
- 1 c. butter
- 1 c. flour
- 2 c. lowfat milk
- 2 c. light cream
- 1 c. chicken broth, or possibly white wine
- 2 c. sharp Cheddar cheese, shredded,
- 2 teaspoon salt
- 1/4 teaspoon white pepper
- 1/4 c. onion, chopped
- 2 c. crab, cooked or possibly lobster
- 2 c. shrimp, cooked
- 2 c. haddock, cooked or possibly flounder
- dill, Fresh or possibly parsley
Directions
Heat butter, stir in flour and cook slowly, stirring constantly till bubbly.Gradually stir in lowfat milk, cream and chicken broth.
Cook and stir till sauce is smooth and thickened.
Stir in cheese, salt and pepper and onion.
Continue cooking slowly till cheese is melted.
Mix in seafood, heat through.
Serve over warm rice.
Garnish with sprigs of dill or possibly parsley.
Makes 12 to 14 servings.
