Gizzard & Garlic Scapes Oyster Sauce Fry



Remove the white-ish grains from the gizzards and slice into 5 mm pieces.
Buying ones with the grains removed already is easier.
Cut the garlic rabes into 5 to 6 cm pieces, and mince the ginger.
Heat vegetable oil in a frying pan and cook the ginger until it becomes fragrant.
Add the gizzards and cook until the surface has become whiten.
Add garlic scapes and stir-fry.
Once mixed in with the oil, add sake and cook until the liquid evaporates.
Sprinkle pepper and oyster sauce, finish with a round of sesame oil and it's complete.
