Rockin' Jimi Hendrix Thai Chicken Curry!
- 1 can (14 ounce) coconut milk
- 2 -3 tablespoons Thai red curry paste, (depending on your preference)
- 1 tablespoon lime juice
- 1 12 cups chicken broth
- 3 tablespoons brown sugar
- 4 tablespoons fish sauce
- 2 chicken breasts
- 12 cup mushrooms, sliced
- 1 yellow pepper
- 2 teaspoons garlic, (minced)
- 2 cups broccoli florets
- 12 medium onion
- 2 teaspoons basil, dried
- 1 green chili pepper, (if you prefer more spice)
DirectionsPrep the veggies & chicken (cut into strips) and set aside.
Over medium heat, combine coconut milk with curry paste & blend well.
Add fish sauce, chicken broth, brown sugar, lime juice and garlic.
Bring to a boil, reduce heat & simmer for 2-3 minutes.
Add in ALL remaining ingredients (Except the Broccoli & Yellow Peppers) Continue to simmer uncovered for 10 minutes, stirring occasionally Add Broccoli & Yellow Peppers, simmer an additional 3-5 minutes Serve over y9our favorite white rice Enjoy the AMAZING Thai Curry that YOU just created with someone special :).
