Eggplant & Green Pepper with Sweet Miso



Peel 3 strips of skin from the eggplant.
Cut into bite-sized pieces.
Also chop the green pepper into bite-sized pieces.
Heat vegetable oil in a frying pan.
Add the eggplant.
Once the eggplant has been coated with the oil, cover with a lid and steam until completely cooked.
Add the green pepper and continue cooking.
Add the sugar, mirin, and miso and quickly coat the ingredients to finish.
