Carolina Caviar
Ingredients
- 2 cans (16 Oz. Size) Black-eyed Peas, Rinsed And Drained
- 1 can (10 Oz. Size) White Shoe Peg Corn, Drained
- 1 Large Firm Tomato, Chopped,
- 1 Green Bell Pepper, Chopped,
- 1 Small White Onion, Chopped,
- 4 Scallions, Chopped,
- 1 cup Parsley, Fresh, Chopped
- 2 cloves Garlic, Minced,
- 1 Tablespoon Cilantro, Fresh, Chopped
- 16 ounces, fluid Italian Dressing

Directions
Combine everything but the dressing in a large bowl.Add dressing and toss until thoroughly combined.
Cover.
Allow to sit and marinate in the refrigerator for at least 4 hours.
