Breakfast Oatmeal Muffins Recipe

(I use homemade trail mix - combining almonds, sunflower nuts, raisins, dates and pumpkin seeds, that I also add in to homemade oatmeal for breakfast.
) Beat Large eggs till light; gradually add in sugar.
Blend in buttermilk and molasses.
Sift dry ingredients; add in to buttermilk mix.
Beat only till blended.
Stir in oats, trail mix and chocolate chips, just sufficient to combine proportionately.
Fill muffin c.
(use paper liners) and bake about 20 min at 350 degrees.
Makes about 30. Great for mid morning snack.
