Beef 'N Broccoli Stir Fry Recipe
Ingredients
- 1/2 pound top round beef, trimmed of all visible fat
- 1/4 c. water
- 1 tbsp soy sauce
- 1/2 teaspoon cornstarch
- 1 tbsp vegetable oil
- 2 c. broccoli florets, fresh
- 1 c. thin strips carrots
- 1 sm. onion cut in 6 to 8 wedges
- Few grains pepper
Directions
Slice beef in strips (across grain i.e.
across the narrow width).
Mix 2 Tbsp.
water with soy sauce and cornstarch in small bowl.
In 10 inch skillet, heat 1 1/2 tsp.
oil.
Add in vegetables and stir fry 2 min till broccoli is bright green.
Reduce heat to low, add in remaining 2 Tbsp.
water, cover and simmer 1 minute.
Return beef to skillet.
Stir in soy sauce mix and add in to skillet.
Cook stirring constantly, till thickened, about 1 minute.
Sprinkle with pepper and serve.
Makes 2 servings.
