Weeknight Chicken Philly Sandwiches



1. Layer the bottom of the slow cooker crock with butter, onions, peppers, and chicken.
Sprinkle the top with the seasonings.
Cover and cook on low for 6-8 hours.
2. Thirty minutes prior to serving, simply shred the chicken with 2 forks and allow to soak in the juices.
3. Slice the rolls in half and toast in the oven using the broiler.
Place chicken filling onto the roll, allowing some of the juices to drain off (otherwise you get a really soggy sandwich).
Top with cheese.
4. Place back under the broiler for 30-60 seconds, watching closely, to melt the cheese.
5. Serve with plenty of napkins.
