Kicking Black Eyed Peas
Ingredients
- 1 lb black-eyed peas, rinsed and sorted
- 12 lb bacon, cooked and crumbled
- 1 tablespoon butter
- 1 large onion
- 1 garlic clove, minced,
- 12 teaspoon thyme, dried
- 14 teaspoon salt
Directions
Please peas and bacon in a large Dutch oven, and enough water to cover.Bring to boil and boil for 2 minutes.
Remove from heat and soak, covered, for 1 hour.
In a skillet, heat butter over medium high heat, add onion, cook until tender.
Add garlic, then thyme and salt.
Add onion mixture to undrained peas and return dutch oven to heat.
Cook, covered, over medium heat until peas are tender (about 30 minutes), stirring occasionally.
