Soused Partridge
Ingredients
- 4 partridge breasts
- 1 cup olive oil
- 1 onion, sliced,
- 5 garlic cloves, roasted
- 2 bay leaves
- 2 tablespoons vinegar
- salt & pepper
Directions
Heat the olive oil and add all the ingredients.cook slowly in a covered casserole until tender.
Should the sauce become reduced and partridge are still tough, add 1 cup water (or more) until tender.
Serve cold.
