Blueberry Ricotta Recipe
DirectionsIn small bowl, combine the flour, 3/4 c.
sugar, baking pwdr and salt.
Add in the lowfat milk, shortening, 1 egg and 1/2 tsp.
Beat with electric mixer on low speed till combined.
Beat on medium speed for one minute.
Pour batter into greased 9 x 9 x 2 inch baking pan.
Sprinkle blueberries over batter.
In medium mixing bowl, lightly beat the two Large eggs with a fork.
Add in Ricotta cheese, the 1/3 c.
sugar, and 1/4 tsp.
Beat till combined.
Spoon Ricotta mix over blueberries proportionately.
Bake at 350 degrees for 55 to 60 min till knife inserted in center comes out clean.
