Sun-Dried Tomato Caprese Pasta Salad
Ingredients
- 1/2 cups Sun-dried Tomatoes, Packed In Oil
- 3 Tablespoons Balsamic Vinegar
- 1/2 cups Oil From The Sun Dried Tomatoes
- 1 pound Whole Grain Rotini Pasta, Cooked According To Package Directions And Rinsed With Cold Water To Cool
- 1 pint Grape Tomatoes, Quartered
- 1 can (15 Oz. Size) Garbanzo Beans, Drained
- 1 cup Black Olives
- 1 Small Red Onion, Chopped,
- 2 cups Baby Spinach
- 8 ounces, weight Fresh Mozzarella Pearls
- 1 cup Basil, Fresh, Cut Into Ribbons

Directions
Add sun-dried tomatoes to blender and pulse until in smaller pieces.Add vinegar and oil.
Set aside.
Add cold pasta to a bowl along with tomatoes, garbanzo beans, olives, onion, spinach leaves, fresh mozzarella pearls and basil ribbons.
Toss with dressing to coat.
